A Visit to The Pumpkin Patch

We have the most delightful Pumpkin Patch every year in Memphis, TN, located at Second Baptist Church .  The best part of it?  The proceeds go straight toward mission work and, what a great cause!


My three oldest children and I went to 'pumpkin shop' after school this afternoon.   The weather was perfect and, much to my thankfulness, they were passing out samples of an amazing pumpkin bread.  Ahhhh.....how I adore a moist and good pumpkin bread!  So fun....they shared the recipe with me!  I am excited to share it with ya'll.   I hope you can locate a pumpkin patch in your town or city this week.  We had so much fun!!!

Second Baptist Pumpkin Bread

3 cups sugar
1 cup salad oil
2 eggs
2 cups fresh cooked pumpkin- mashed (or, use canned) 
3 cups sifted flour
1 t. salt
1 t. baking soda
1 t. ground cloves
1 t. ground nutmeg
1 Tablespoon ground cinnamon

Cream sugar, oil, and eggs together until fluffy.  Add pumpkin and mix well.  Sift flour, salt, and spices, and beat into the pumpkin mixture.  Bake in 2 (or 3 small) greased loaf pans for 1 hour at 350 degrees. 

**Easy way to cook fresh pumpkin.  Wash the outside and cut it into cubes, leaving the rind on.  Throw away the seeds.  Put the cubes in a large covered bowl (no water added), and microwave for ten minutes.  Stir it gently and check for tenderness.  Keep microwaving in shorter times until the pumpkin is very tender (it may take 20+ minutes).  Drain off what little water has accumulated.  When the pumpkin is cool enough to handle, you can easily peel it and mash it.  One small pie pumpkin will make 4-5 cups of mashed pumpkin.
