A QUICK DINNER IDEA

This is a quick dinner that I made on Saturday night: Country Style Pork Ribs With Blackberry Chipotle Sauce- Cook ribs at 475 degrees for 30-35 mins., turn over after 15 mins. * Season with salt, pepper and garlic powder before cooking.  The sauce is found in a bottle and, my Mom purchased it at Tuesday Morning, on the gourmet aisle. You can also serve with plum jam. Heat sauce for 45 seconds in the microwave before serving.  Homestyle Green Beans: 1 bag frozen green beans, 1 T. bacon grease (leftover from bacon that a.m.), salt and pepper and garlic powder (approx. 3/4 t. each).  Bring to a boil for 5-6 mins. Drain and serve. Note: Fry 3 thick strips of bacon and, cut up bacon and put in beans- this way you have the grease to add. Roasted Parsley Potatoes: 6 white potatoes, skin on and, cut in cubes. Pour 3 T. of olive oil on a small baking sheet. Add potatoes. Season with salt, pepper, garlic powder and fresh parsley (chopped). Drizzle 2 T. olive oil over the top. Bake at 450 degrees x 30 mins. or, until tender.  * The meal was a 'crowd pleaser' with my family! 






Chocolate Chip Cookie Sundaes With Skillet Hot Fudge Sauce:


I used Pillsbury ready to bake chocolate chip cookies. (Always good to keep in your refrigerator for last minute guests).  Hot Fudge Sauce: 3/4 c. cocoa, 1/2 c. sugar, 1/2 stick butter, 1 t. vanilla.  Stir all together over low heat until simmering. Spoon over cookies and vanilla ice cream.  *John and I were literally eating this out of the skillet!  FLAIR TIP:  Good enough to serve for a dinner party.
