A WEDDING SHOWER FOR 50 GUESTS

My husband and I and, another dear couple, were grateful to host a wedding shower in our home this past weekend.  WHAT FUN!  I wanted to share a few of the easy recipes that I prepared and, encourage you to host a shower with FLAIR as soon as possible!  
First thing.....pick a theme.  This shower was themed "Around the House" .  Each guest was assigned a room of the house to bring a gift for, i.e. :  Kitchen, bathroom,  
dining room and porch.  These wonderful invitations were designed by my friend Natalie Chang.
I had fun making this more contemporary arrangement, with calla lilies. 
HOT CORN DIP  *(Can Easily Double This)

2 (8 ounce) packages cream cheese
1 stick butter
1 (16 ounce) package frozen corn
1 (4 ounce) can chopped jalapenos
1 bag lime flavored tortilla chips

Pre-heat the oven to 350 degrees.  Place packages of cream cheese and stick of butter in a bowl and microwave for 1 minute to soften. Upon removing, combine cream cheese and butter using a hand mixer.  Drain the jalapenos.  Add bag of frozen corn and jalapenos. Combine using a spatula. Put mixture in an oven safe container. Bake for 30 minutes, stirring halfway.  Serve with chips.  FLAIR TIP: * Add salt and white pepper (1 teaspoon each) according to your taste. 
CARAMEL ICE CREAM DESSERT

1 box vanilla wafers
1/2 cup sugar
1/2 stick butter, softened
2 cartons vanilla ice cream with caramel
1 large container of COOL WHIP
1 jar caramel ice cream topping
1/2 bag HEATH chocolate toffee bits (baking section)

Crush up vanilla wafers in a ZIPLOC bag with sugar and softened butter.  * I used a rolling pin in order to crush.  Press the cookie mixture in bottom of a 9 x 13 glass baking dish.  Allow the ice cream to soften ( 45 minutes at room temperature) and spread it over the vanilla wafer crust. Layer the COOL WHIP over ice cream.  Drizzle the caramel topping over the COOL WHIP and, garnish with HEATH bar chips.  FREEZE for 6-8 hours or over night.  Cut and serve.

* My dear sister-in-law, EMILY BRYSON CLEM, was my inspiration for this recipe.  She makes it with an OREO cookie crust and, chocolate chip ice cream.  Very good!  
BUFFALO HOT WING DIP

2 (8 ounce) packages cream cheese
4 can cooked chicken ( OR- you can use chicken pieces from a cooked rotisserie chicken)
1 bottle Texas Pete Buffalo Wing Sauce
1 cup Ranch dressing
1 (8 ounce) package shredded cheddar cheese
1 (8 ounce) package shredded Monterrey Jack cheese

Melt cream cheese in bottom of a 9 x 13 inch baking dish. Spread smooth on the bottom of baking dish. Drain cans of chicken and mix with bottle of Texas Pete sauce and Ranch dressing. Pour over cream cheese. Sprinkle cheddar and Monterrey Jack cheese on top. Bake in 325 degree oven until cheese is melted. Serve with tortilla chips. 
I LOVE to serve drinks in glass punch cups!  These are EASILY collected!  I currently own 80-85 of these wonderful cups---collected over the years at GOODWILL locations and, garage sales.
A GREAT item to have on hand!

Do not forget to look around in your yard for fresh blooms of any kind.  These pretty pink dogwoods are blooming right outside our kitchen window. 



OYSTER CRACKERS

1 double package Hidden Valley Ranch Dressing Mix
1T. dill week
1 T. lemon pepper
1 teaspoon garlic powder
3 (12-14 ounce) packages Oyster crackers
2 cups Canola oil

In a bowl, mix dressing, dill week, lemon pepper, and garlic powder together.  In a large bowl, combine half of the oyster crackers with half the spice mixture. Pour 1 cup oil over all and mix well with wooden spoon.  Repeat with remaining ingredients. Stir every 15 minutes, about 4 times. 


Pistachios are a great and healthy snack for your guests.  Place in bowls and set them out. 




STRAWBERRY CAKE 

1 box white cake mix
1 box strawberry gelatin
1 cup oil
1/2 cup milk
4 eggs
1 cup frozen sliced strawberries

Preheat oven to 350 degrees. Prepare three 8" round cake pans coated with non-stick spray and floured. Thaw frozen strawberries completely. Mix cake mix and strawberry gelatin first and then, add oil, milk, eggs and strawberries using a mixer at high speed. Pour into prepared pans. 

FROSTING 
1 stick butter
1 box powdered sugar
1/2 cup frozen sliced strawberries

Prepare frosting while cake is baking. Thaw and drain strawberries and mix with softened margarine and powdered sugar. Once cake has cooled, spread frosting.  
* A VERY MOIST AND DELICIOUS CAKE!!!!

The party table all ready to go!  My friend Margaret Libby Winstead brought the GORGEOUS cookie and brownie tray as well as the pretty fruit trifle dessert.  



People often tell me that planning and hosting a shower seems difficult.  Please, no matter what your season of life or schedule, you CAN find the time to host a shower and honor a special couple or friend.  What is my secret?  FIRST of all, host with a good friend and, divide the cooking. SECOND, prepare QUICK and EASY recipes that are TASTY. WEEKEND COOKING

Cooking on the weekend is such FUN!  Whether you are hosting a Saturday night dinner party or, a nice Sunday luncheon, you will LOVE these recipes!!  Cooking at home, with FLAIR.....one of my favorite things to do! 


Asparagus is one of the best side dishes.  FRESH and ALWAYS tasty!  


I found this recipe in this month's COOKING LIGHT MAGAZINE. *A favorite resource for excellent and healthy recipes.   Very good! 


Asparagus with Balsamic Tomatoes 

  • 1  pound  asparagus, trimmed
  • 2  teaspoons  extra-virgin olive oil
  • 1 1/2  cups  halved grape tomatoes
  • 1/2  teaspoon minced fresh garlic  *(I use the kind in the 
  • produce section, in a jar) 
  • 2  tablespoons  balsamic vinegar
  • 1/4  teaspoon  salt
  • 3  tablespoons  crumbled goat cheese
  • 1/2  teaspoon  black pepper
Cook asparagus in boiling water 2 minutes or until crisp-tender. Drain.  Heat olive oil in a large skillet over medium-high heat. Add tomatoes and garlic; cook 5 minutes. Stir in vinegar; cook 3 minutes. Stir in salt. Arrange asparagus on a platter; top with tomato mixture. Sprinkle with cheese and pepper.





Baked Catfish
6 catfish fillets
2/3  cup Parmesan cheese
1/4 cup flour
1/2 tsp. salt
1/4 tsp. black pepper
1 tsp. paprika
1/4 cup milk (skim is fine)
1 egg, beaten OR 2 egg whites
1/4 cup sliced almonds
2 to 3 tbls. butter, melted


 Preheat oven to 350 degrees. Combine the Parmesan cheese, flour, salt, pepper  and paprika in shallow dish and set aside. Mix together milk and beaten egg or egg whites. Dip the catfish fillets in the milk mixture and then into the flour mixture. Place in a single layer in a pan which has been sprayed with nonstick cooking spray.  


Sprinkle with almonds and drizzle with butter.


Bake in preheated 350-degree oven for 35-45 minutes.

Best Carrot Cake 



  • 2  cups  all-purpose flour
  • 2  teaspoons  baking soda
  • 1/2  teaspoon  salt
  • 2  teaspoons  ground cinnamon
  • 3  large eggs
  • 2  cups  sugar
  • 3/4  cup  vegetable oil
  • 3/4  cup  buttermilk
  • 2  teaspoons  vanilla extract
  • 2  cups  grated carrot
  • 1  (8-ounce) can crushed pineapple, drained
  • 1  (3 1/2-ounce) can flaked coconut
  • 1  cup  chopped pecans or walnuts

Buttermilk Glaze 
  • 1  cup  sugar
    • 1 1/2  teaspoons  baking soda
    • 1/2  cup  buttermilk
    • 1/2  cup  butter or margarine
    • 1  tablespoon  light corn syrup
    • 1  teaspoon  vanilla extract
    Bring first 5 ingredients to a boil in a large Dutch oven over medium-high heat. Boil, stirring often, 4 minutes. Remove from heat, and stir in vanilla.
    Cream Cheese Frosting:


  • 3/4  cup  butter or margarine, softened
  • 1  (8-ounce) package cream cheese, softened
  • 1  (3-ounce) package cream cheese, softened
  • 3  cups  sifted powdered sugar
  • 1 1/2  teaspoons  vanilla extract
Beat butter and cream cheese at medium speed with an electric mixer until creamy. Add powdered sugar and vanilla; beat until smooth.
Line 3 (9-inch) round cakepans with wax paper; lightly grease and flour wax paper. Set pans aside.
Stir together first 4 ingredients.
Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour batter into prepared cakepans.
Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Drizzle Buttermilk Glaze evenly over layers; cool in pans on wire racks 15 minutes. Remove from pans, and cool completely on wire racks. Spread Cream Cheese Frosting between layers and on top and sides of cake.

CHOCOLATE SHEET CAKE- A CROWD PLEASER

I baked this cake for a meeting tonight and, I noticed that the nine people around the table ate every bite!  This is a QUICK cake to bake and I hope you enjoy it!  


CHOCOLATE SHEET CAKE WITH NANNY'S FUDGE ICING 


1 box chocolate cake mix (make according to package directions)
1 can sweetened condensed milk.


Make the cake according to package directions.  Once it is baked, poke holes in the cake, with the end of a wooden spoon. Pour the can of sweetened condensed milk over the cake and, spread evenly with a spatula. Source: My dear friend Aimee Parkinson (Memphis, TN) gave me this idea many years ago. 
NANNY'S FUDGE ICING 


1 stick butter
1/2 cup cocoa
1 box powdered sugar  (or, 1/2 a large bag) 
1/4 cup milk  (can add add extra 3 T., as needed, to make icing spreadable)
1 t. vanilla


Melt the butter in a saucepan over medium heat.  Add the cocoa and stir until the cocoa is dissolved.  Turn off the heat.  Add the powdered sugar, milk and vanilla.  Stir all together. * In order to make the icing smooth, put back on low heat and, stir until the icing is a spreadable consistency.  Pour over the warm cake.  Serve warm with vanilla ice cream. 


FLAIR TIP:  This cake would make an EXCELLENT birthday cake!

THREE GREAT RECIPES FROM THE WEEKEND: FRESH FISH TACOS, HAMBURGER CASSEROLE and QUICK PEACH COBBLER

What a fun weekend of being at home with my husband and children and, a good time inventing two new recipes.  I also want to share a FANTASTIC and SUPER EASY cobbler recipe with you all, I haven't made it in many years and,  remembered what a great recipe it is! 


FRESH MAHI MAHI TACOS 

1 large mahimahi filet  (Or Tilapia) 
1 cup Cheddar Jack cheese- grated
sea salt and fresh ground pepper to taste 
1 cup fresh salsa
1/2 cup Ranch dressing
Corn tortillas 
Garnish:  Fresh cilantro

Rinse the fish and season with salt and pepper.  Broil for 20-25 minutes, check and make sure you do not over cook.  Chop the fish into 1-inch cubes.  Place the fish on warmed corn tortillas and, top with cheese, salsa, Ranch dressing and, chopped cilantro.  

THESE TACOS MAKE A FAST and FRESH MEAL!  

PEACH COBBLER

1 cup sugar
1 cup flour
2 teaspoons baking powder
dash of salt
1/2 cup milk
1/2 stick butter, melted
1 can of chopped peaches (not pie filling)

Spray an 8 X 8 baking dish or disposable pan with baking spray.  Place melted butter in the dish.  Mix together sugar, flour, baking powder, salt and milk.  Press dough in bottom of pan.   Place the can of peaches on top of the dough, no need to drain the peaches.  Bake the cobbler at 350 degrees for 45 minutes or, until the cobbler is lightly browned.

*This recipe can easily be doubled and, use a glass 9 X 13 pan for this.  Serve warm with vanilla ice cream.  *The dough will rise up and cover the peaches during baking. * You can also use a can of pie cherries in place of the peaches. 
QUICK AND GOOD: HAMBURGER CASSEROLE

1 pound ground beef
1 package taco seasoning
1 can pinto beans, drained
1 can diced tomatoes, drained 
1 t. salt
1 t. pepper
1/2 t. garlic powder, or more, to taste 
1 can cream of mushroom and chicken soup
2 cups Cheddar Jack cheese
15 corn tortillas 

Brown hamburger meat with taco seasoning and drain.  Add beans, tomatoes, soup and spices to the meat. Stir up.  Spray a 9 X 13 glass dish with cooking spray.  Tear up 12-15 corn tortillas into one-inch pieces.  Starting with the tortillas, layer with sauce and tortillas, ending with sauce.  Top with cheese.  Bake at 350 degrees for 30 minutes.  Garnish with sour cream and salsa. 

FLAIR TIP:  I made this casserole for some family friends Sunday evening.  Always take a disposable pan when you are making a meal to take to someone.  *I stock up on these pans at COSTCO and, always have them ready in the event I need to deliver a meal.  *Very convenient for the receiver to not have to return your dish.  FLAIR TIP:  Keep cute STICKER LABELS on hand at all times.  You can easily label each dish that you are delivering to your friend (or person in need) with the recipe name and, cooking directions.  Use colorful labels on the tin foil. The label will add a nice detail and a pop of color.

EXCELLENT POUND CAKE RECIPE

I baked this Tuesday morning for my Bible Study.  A new recipe for me and, I happened to have all of the ingredients on hand. *FLAIR TIP: Serve warm right from the oven with good coffee.  NOTHING LIKE IT!  Do not forget to invite a friend over or a neighbor. Extending hospitality to someone is extremely kind. By simple kind acts, we encourage our friends and spurn them on. 
SUNDROP POUND CAKE


1 cup butter, softened
1/2 cup Crisco
3 cups sugar
5 large eggs
3 1/2 cups flour, sifted
1 1/2 teaspoons vanilla
1/2 teaspoon lemon extract
*7 ounces Sundrop soft drink 
Preheat oven to 325 degrees.


Cream butter, shortening, and sugar in a large bowl.  Add eggs one at a time. Stir in flour slowly.  Add vanilla, lemon extract and Sundrop *(may also use Mountain Dew or Mello Yellow).  Stir well. Pour into buttered and floured bundt or tube pan. Bake 1 hour 20 minutes.

A WEEKEND MEAL- COMFORT FOOD

I have been making these enchiladas for years.  They are very easy to prepare for a crowd or, you may prepare one half of the recipe for your family.

CREAM CHEESE CHICKEN ENCHILADAS       
1 T. butter
1 medium onion, chopped
1 small can chopped green chilis
1 package cream cheese, cut up and softened
1/2 cup sour cream 
4 chicken breasts, chopped and cooked
1 t. salt
1 t. garlic powder
8 flour tortillas
2 packages Monterey Jack cheese, grated
2 cups whipping cream 
Melt butter in a large skillet over medium heat; add onion, and saute' 5 minutes. Add green chiles and saute' one minute.  Stir in cream cheese, sour cream, chicken, salt and garlic powder.  Spoon 3 tablespoons chicken mixture down center of each tortilla. Roll up tortillas, and place, seam side down, in a lightly greased 9 x 13 inch baking dish. Sprinkle with Monterey Jack Cheese and pour the whipping cream over the top.  Bake at 350 degrees for 45 minutes. 
*FLAIR TIP:  I often serve these cut in half because a whole one is a very large serving.  These can be made the night before and, add whipping cream right before baking. 
I am blessed to be in a family with FANTASTIC cooks!  This salad recipe was shared with me by my sister, Patti Weaver, in 2002. Truly wonderful!  
MILLION DOLLAR SALAD
1 bunch red tip lettuce
1 bunch mixed greens
1 cup cherry tomatoes, sliced in half
1/2 bag of Craisins
1 container feta cheese, crumbled
TOP WITH:
 2 handfuls toasted chopped pecans
1 large Granny Smith apple, chopped
DRESSING:
Brianna's Blush Wine Dressing 
Toss and serve. 
QUICK PEACH COBBLER
1 cup all-purpose flour
2 teaspoons baking powder
3/4 cup white sugar
3/4 cup milk
1/4 cup butter
2 cups sliced fresh peaches  * You may also use sliced/canned peaches


  • Directions: Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.  Blend together flour, baking powder, sugar, and milk.

  • Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.
FLAIR TIP: Serve warm with Buttered Pecan ice cream and, drizzle warm caramel syrup (in a jar) over the top, with a dollop of whipping cream and toffee pieces (found on the baking aisle, near chocolate chips).  This could be served for a casual dinner or an elegant dinner party.  DELICIOUS!
