Second Baptist Pumpkin Bread
3 cups sugar 1 cup salad oil 2 eggs 2 cups fresh cooked pumpkin- mashed (or, use canned) 3 cups sifted flour 1 t. salt 1 t. baking soda 1 t. ground cloves 1 t. ground nutmeg 1 Tablespoon ground cinnamon
Cream sugar, oil, and eggs together until fluffy. Add pumpkin and mix well. Sift flour, salt, and spices, and beat into the pumpkin mixture. Bake in 2 (or 3 small) greased loaf pans for 1 hour at 350 degrees.
**Easy way to cook fresh pumpkin. Wash the outside and cut it into cubes, leaving the rind on. Throw away the seeds. Put the cubes in a large covered bowl (no water added), and microwave for ten minutes. Stir it gently and check for tenderness. Keep microwaving in shorter times until the pumpkin is very tender (it may take 20+ minutes). Drain off what little water has accumulated. When the pumpkin is cool enough to handle, you can easily peel it and mash it. One small pie pumpkin will make 4-5 cups of mashed pumpkin. |
